She's Eclectic: An Interview With Lynette Horner Of Nice Icing

Eclectic with a hint of quirky - this is how Lynette Horner, founder of Nice Icing, describes her bespoke cake creations. Using the finest ingredients, Lynette transforms tiers into edible works of art using her iconic sugar-crafted detailing that cascades down each and every design. More is definitely more, which is why we talk to the master of intricate about next season’s trends, couples and their flavours, and which celebrity she’d love to bake for...

 

How did you get into baking?

“As a small child helping my mum! I then started taking it seriously about 20 years ago.”

Where do you get your inspiration from?

“Anything and everywhere inspires me; the colours and textures of intricate plasterwork ceilings, hand-painted wallpapers and vintage textiles have all featured in my cakes… Oh, and there’s Pinterest of course!”

Your cakes are all hand-crafted, how long does it take to add all that intricate detailing?

“Anything up to a week depending on the detail in the design, and the amount of sugar flowers and modelling required.”

If you could create a cake for anyone in the world who would it be?

“That’s easy - Tom Hardy! Not as himself, but as his character in Taboo. I loved all the dramatic, atmospheric dark purples, blues, ochre, golds and blacks used in the styling.”

If you didn’t become an expert baker, what would you be doing?

“A props mistress (something I have done before in Am-dram productions) or a photographer if I could work out how to use a proper camera!”

Do you think the flavour that a client/couple chooses says a lot about them?

“It can do. I would say couples who opt for a different favour for every tier and include flavours like strawberry/champagne and Peach Bellini are more adventurous than ones who opt for all fruit or vanilla sponge.”

What’s been your most favourite cake that you’ve created?

“My signature Birds & Blossoms cake, inspired by hand-painted Chinese wallpaper, is my favourite. I never tire of creating new colourways and versions of this design.”

Are there any cake trends you foresee in A/W17 – S/S18?

“Metallics will still be big, and cakes with a different design on each tier. Also big blousy blooms and less informal sprays of flowers with a wilder, woodsy look (that’s what I’m hoping for anyway!)"
