Today, we’re shining a spotlight on one of our most prestigious Yorkshire clients – Blossom Tree Cake Company. For those of you who aren’t familiar with Blossom Tree Cake Company (where have you been?!) These connoisseurs of cakes specialise in creating individually designed and bespoke wedding cakes and celebration cakes that taste as amazing as they look (trust us, we’ve had the pleasure of taste testing them ourselves!) It’s no secret that we love these guys and the cakes they create, which is why we’ve spoken to the master of minimal and the face of BTCC, Kean Ong about cakes, cakes, and even more cakes…
Why did you want to become a connoisseur of cakes?
I’ve always had a creative mind. After training as a pastry chef at Westminster Kingsway College, I worked for many years in London restaurants developing a passion for French patisserie and creating fine dining desserts. Now based in Harrogate, it’s so rewarding to combine that passion for design and creativity making spectacular wedding cakes.
What cake trends do you foresee in 2017 and beyond?
Incorporating a marble-icing tier continues to be popular this year and Pantone’s 2017 colour of the year ‘greenery’ will feature strongly too. Contrasting white tiers with contemporary sugar flowers and foliage, or rose gold detailing, as well as fresh zesty greens, succulents and verdant foliage brought out in sugar craft florals and foliage. Bold metallic design elements in edible gold, silver leaf or edible lustre decoration is extremely popular too.
What inspires your cake creations?
Each couple is at the heart of every design. Weaving key elements into a simple, yet elegant and striking contemporary design is what I try to bring to each commission.
Is there a cake you’ve created that you’re particularly proud of?
There’s a particular design feature I’m really proud of and it’s my signature fluffy icing – a technique I developed and one that seems very popular!
What’s the most unusual cake you’ve created?
I was asked to create a romantic and dramatic cake for a photoshoot at The Highfield House, in Driffield. The end result; our ‘Black and Gold’ wedding cake contrasting black and gold finishes with burgundy ranunculus and blush pink roses. Probably not everyone’s cup of tea, but we’ve had some fantastic feedback.
What is your favourite flavour?
Passionfruit and vanilla, zesty lemon, classic Victoria and chocolate salted caramel. Personally, I can’t resist zesty lemon too!
If you didn’t become an expert baker, what do you think you would have done?
Probably a garden or interior designer, something involving creative design.
If there was one cake/dessert that you had to eat for the rest of your life, what would it be?
If I had to choose just one, then probably creme patissiere filled religieuse – it’s a classic French pastry.
